docs: Document GitLab custom CI/CD variables
We introduced the QEMU_CI_AVOCADO_TESTING variable in commit f56bf4caf
("gitlab: Run Avocado tests manually (except mainstream CI)"), but
forgot to document it properly. Do it now.
